Lunch (3:45pm) - 1/2 Low Carb Sloppy Joe Sandwich with Tex-Mex Sloppy Joe Filling (1/2 LC Revolution Roll, 1/4 serving Tex-Mex Sloppy Joe Filling, 1oz Cheddar)
Dinner (6:00pm) - Chicken Bone Broth LC Noodle Soup (2c Chicken Bone Broth, 3oz Chicken Breast (skin not eaten), 1oz Zucchini, 1med Mushroom, 1oz Green Cabbage, 2 servings Shiritaki Noodles, 1-1/2Tbsp Chicken Schmaltz)
Dessert (6:45pm) - 1 serving SF Strawberry Banana Gelatin
Bed - 11pm
Notes - We had a huge power outtage yesterday afternoon. Don't understand why. We had just a tiny rain and poof! It was gone! Have no idea how long it was out in total. We finally left after a couple of hours and when the house got up to 80°. We went to a little neighborhood haunt and Denny had wine.
Denny splurged on a gluten free pizza and I had a gorgeous salad! Wow! Their vinaigrette dressing was outstanding! Lot's of garlic, no sweetener, herbs, yummy! It was a Big Blue Salad! And it was huge! I ended up having a small serving and taking the rest home. Then Denny and I split it later (at 10pm! *blush*). Totally blew the CR eating window then went to bed just an hour later. Actually, I fell asleep in my chair! The restless night previously, must have caught up with me!
It rained through the night and this morning. I woke up mostly rested feeling and ready to "go". Think my lungs feel a little better, not as tight this morning. So hopefully it will continue to improve.
I've now been cooking chicken bone broth for close to 24 hours (minus the time the power went out). I'm going to play Food Roulette with it. When we left the temp of the contents were 182°. I left it outside (inside the propane grill without it being lit - it is in a huge crockpot) in 90+ degree ambient temperature for only God knows how long the power outtage lasted...and I'm hoping during that time that it didn't fall below 150° for longer than 2 hours. We were gone from 7pm until 10pm. I would think it's highly unlikely for this scenario to have occurred because the power was on when we returned at 10pm and the stock was boiling vigorously. I think it will be just fine.
Sunday's are Medium Days for my JUDDD plan. I make Sundays a Medium Day (MD) because I like having consistent M-W-F Down Days. It just makes it easier on me with a scheduled plan. Then I know how to change it up if necessary for family and friends. But we mostly prefer to plan things for Tue-Thurs-Sat to coincide with UD (Up Days). I'm thinking I will have a big cup of chicken soup tonite with shiritaki noodles or with rutabaga and cabbage.
Oh, my weight is down to 222.8lbs. Still not gonna get excited. I'm expecting the bounce back up at any moment! We'll see what happens over the next few days. But I'm still down over 91 lbs! Woot!
