Dinner (9:00pm) - Big Salad with Grilled Chicken (5oz Chick Breast, 3c Romaine, 4 slices Cucumber, 4 Grape Tomatoes, 3/4oz Cheddar, 2Tbsp WF ZC Ranch)

Notes - Holy Jehosafat!!! What a bust, yesterday! I'd like to apologize to the academy and to Dr. J. for my poor choices and behavior. LOL. Hoooooo doggggey! When I mess up, I really mess up with a doozy!
Yesterday began with an unscheduled midnight snack. In my sleep-impaired state, I did manage to choose protein and fat in the form of a skinless chicken thigh - so there is that small up side.
Then the day fell apart. I needed to make a recipe and photograph it for an article, and things were going well. Had my planned lunch eaten caveman style - standing over the sink without a light on, shovelling it in quickly so I could get back to work.
No problems.
Afternoon came. Making the recipe...tasted it a couple of times, still within reason...no problem. (EXCEPT! I have sworn off cheese, onions, garlic, root veggies, canned goods, etc! While trying to do this danged ol yeast elimination diet...)
Then the shambolic evening ensued. We noticed a spot on our ceiling in the kitchen this weekend. We thought it was maybe just a slow drip in a pipe from a/c condensation and runoff. You know, no big whoop. So we called the repair guy and he couldn't get out till last night. I told him I felt the spot and it felt wet to me. I made him get up on the step stool and feel it. He said he believed me, but I made him do it.
The second he poked it, a big old plate size hole fell outta the ceiling almost on top of him, but all over our counters. It was a good thing the food was covered and everything moved off the counter. I'd had a premonition that I needed to squirrel stuff away off the island in case he wanted to set a tool kit on it or have area to work. I wasn't expecting the sky to fall, Henny Penny!
So sure enough. There's a pipe right overhead and it's dripping. Huge, plopping drips! And he says, "Wow, the sheet rock is soaked up here! It's all wet." And he starts breaking off pieces of the worst stuff. By the time he's finished, he's peeled off about 2' x 1' of ceiling and he tells us, there is still about a 2 to 3 foot area of moisture up there but that he didn't want to leave us with a huge hole in the ceiling. Nah...a small hole will do just fine, thanks.
Well, we still hadn't eaten because he was supposed to get there at 6pm to give us an estimate on fixing the leak. He was an hour late and his estimate lasted for almost an hour. The entire kitchen ceiling may have to be ripped out! Oy veh!
Ring. Ring.
"Hello Allstate? Please, PLEASE! Tell me we're in good hands?"
*sob*
Well, by the time he finished and we finished sweeping up wet sheetrock and wiping things down with clorox (Hello, I'm allergic to chlorine and mildew. Maybe this is why I've had the asthma flare-up!), it was after 9pm and we still hadn't eaten and my dish for the article has been sitting out in containers for a couple of hours. Yep. That's right. It's time to play Dinner Roulette! Food poisoning v. full tummy! The age old culinary game of daring and chance! Full tummy won of course and I'm thankful to report we did not have to deal with food poisoning.
I had neither the desire nor inclination to fix a separate meal for me. I also wanted comfort food. Cheesy gooey comfort food - asthma be damned. So I did it. I knew looking at the plate that it was way more than I needed or wanted and yet I still did it. Non-compliant, bone-headed, out-of-sorts pissy mooded me. I did it. And if I wasn't on such heavy duty meds, I woulda busted my sobriety too with a couple of Vodka martinis and compounded problems even more!
We didn't get to bed until midnight and I'm exhausted this morning. I'm also up 1.4 lbs this morning, unsurprisingly. I'm not too wigged about it. There is typically a bounce on JUDDD UDs anyway. But add to the fact I had almost 4000mg of sodium, a wad of pork rinds, cheese out the watoosie, too much protein, too much fat, too high calories, too many carbs for the amount of protein and fat all combined with sugar in my Nystatin medicine and ibuprofen yesterday that makes me swell and inhaled high dose cortisone and there you have it. The reasons for the bounce.
Ok, so today we're supposed to hear from the insurance claims adjustor. Please say prayers they will cover this work. I don't know how bad this is going to be. So say prayers it won't be bad and will be a minor fix - nothing major! Say prayers that this will fix any source of mold that has my asthma stirred up and I will be able to reduce my cortisone levels and start losing weight again!
