Breakfast (11:00) - 3c Decaff Coffee, black, unsweetened
1 LC/HiFib Southern Biscuit Sandwich (1 LCHiFi Biscuit, 1/2oz Cheddar, 1 Egg fried with Olive Oil spray, 1 piece bacon)
6 Grape Tomatoes
Lunch (2pm) - 4 Egg Salad with Veggies Lettuce Boats (2 Eggs, 1/2Tbsp Mayo, 2 Tbsp Greek Yogurt, 1 tsp Dijon, 1 lg rib Celery, 1/3 lg Cucumber, 2oz RBPepper, 1/8c Red Onion, 4 Romaine Leaves)
Snack (4pm)- 1/4 small Granny Smith Apple
1/2 Tbsp Peanut Butter
Dinner (6:30pm)- 1 Dinner Salad (1c Romaine, 4 Grape Tomatoes, 1/4 small Avocado, 1/8c Red Onion, 1/8c Red Bell Pepper, 1 cu in Blue Cheese, 1 slice Bacon, 2 Tbsp WF Balsamic Dressing)
1/2c Broccoli, steamed with 1 tsp Butter, 2 Tbsp Greek Yogurt, 1/3 oz Cheddar, 1 Green Onion, 1 small piece Bacon)
1/2c Green Beans with Garlic & Sambal Oelek
Bed - 11:00pm
Notes - Had a bad night. Woke at 3am and couldn't get back to sleep due to pain. Up most of night. Finally fell asleep around 6:30am and slept through until 8am. Woke up at 8, STARVING! Very difficult to defer eating until eating window opened. Weight is up. Dinner last night had a lot of sodium and more cheese than usual. Don't have any test strips so don't know if blood sugar is screwy but with the weight and appetite up I would think blood sugar is up.Was hungry all day.
